El Cucuy Burritos began late August 2021, as a mobile kitchen. The business has been thriving on a creative menu boasting authentic California burritos and menu of ambitious culinary exploration.
Owner Mark Kimberlin has a long resume of culinary development, operational management, & creativity that fuels the concept.
El Cucuy Burritos is a celebration of our Southwestern, Mexican, and Latin culture. Not only the food, but the whole experience. Our menu is a culmination of powerful flavor profiles, and standalone it is sure to wow the critics, but the food is meant to be enjoyed with the colors, the music, and the storytelling. Not many people understand what CUCUY or CHUPACABRA or LLORONA is, much less say the names correctly, and this is great icebreaking for what we offer. Teaching our community about folklore or explaining our music selection or even simply helping our neighbors pronounce their orders gives some added weight to our menu items and can allow you to enjoy the food that much better.
Our mission is to serve the freshest locally grown produce and serve the community through intensity, integrity, and originality. This means daily gathered produce from local farms from trusted suppliers, no frozen meats, no microwaves. If its not fresh, if its not great, we will not serve it! This also means serving our neighbors with compassion, patience, and a unique style and attitiude that will shake up the industry standards.
Our vision is to be the most iconic Mexican-inspired restaurant and mobile kitchen. There is a saturation of Mexican, Tex-Mex, and Southwest restaurants but we have a goal and drive that is relentless and contagious of originality. This is true for our attention to detail, sincerity to our community and guests, and our aggressive drive for El Cucuy’s growth.
MEET THE OWNER
Owner, Mark Kimberlin, is a North Texas native. Mark was born in Dallas, TX and relocated to Denton in 2005 to peruse a Bachelors of Fine Arts from the University of North Texas. Now a UNT alumni, the owner’s eye for color, love for Mexican and Southwestern cuisine, and support for local arts has been the driving force for El Cucuy Burritos. Mark has been involved with the North Texas art and music community for two decades having had performed in several acts, exhibited pieces in exhibitions, as well as curated many events and festivals has given El Cucuy an edge to immerse within the community effortlessly. ”I am very excited to bring a taste of my kitchen to my town” and “providing great food and celebrating the foods’ culture while staying as green as possible is my goal” are a few quotes from Mark.

You can reserve our services for on-site events such as weddings, birthdays, staff lunches, concerts, and any other event with as little as a 14 day notice. We know that brining something special to the table can make any ordinary event a huge success as well as providing that unique experience. El Cucuy Burritos will make that happen.
CATERING & BULK ORDERING
We are able to work with your budget to bring a special flavor to your office party, weekly meeting, any gathering. Let us know what the occasion is as well as the vision and we see it through. Bulk ordering in most cases can be fulfilled with a 24 hour notice.
